These Eggless lemon bars are delicious as it looks..look at the colour, bright, punchy and certainly appetising too. I have been thinking of baking these eggless lemon bars for a while and finally made these beauties.. I found this recipe from here..

I am a  great fan of eggs in my baking but its always good to give new things a try. These eggless version were close enough to my favourite version of lemon tarts that I bake often. My boys had different opinion  and I love to take their words too.They thought that the texture was more or less like a jelly but delicious too.

Eggless versions of baking are becoming very popular these days as many of them are vegans and they are keen of finding great substitutes for  classic versions. Cornstarch / cornflour and a can of coconut cream acts a perfect substitute for eggs.

On a different note, we know that our lives are off track since the outbreak of  Covid 19 and many of us have to remotely work from home. This is possible for some but not for everyone. I am a freelancer and there are times I have to shoot at clients place for their approval and direction. This has affected me and I have found it difficult to execute  few assignments remotely. I had no other choice than to postponed them. Well we all are waiting patiently, the good news is that in Australia, the curve is flattening. Things are looking positive and hopeful. HOW TO BAKE EGGLESS LEMON BARS

Eggless lemon bars

  • For Crust
  • 1/2 cup dried shredded coconut
  • 1 cup old-fashion rolled oats
  • 1/4 teaspoon sea salt
  • 1/2 cup plain flour
  • 1/4 cup melted extra-virgin coconut oil or butter
  • 1/4 cup raw sugar
  • For filling
  • 3/4 cup lemon juice, chilled
  • 1/2 cup cornstarch
  • 1 (14 ounce) can coconut cream
  • 1 cup organic raw sugar
  • 2 tablespoons lemon zest
  • 1/2 teaspoon salt
  • Pinch turmeric, optional, for color

Preheat  the oven to 350°F.

Begin by making the crust. Place the butter sugar, oats coconut in a food processor and process until the mixture is well combined.

Spread the dough in an even layer into the bottom of a 9 x 13 inch baking pan.

Bake for about 10 to 12 minutes, just until the edges of the crust begin to pull away from the sides of the pan.

In the mean time, Whisk the lemon juice and cornstarch together in a small bowl. Place coconut cream, sugar, lemon zest salt and turmeric in sauce pan and cook on a medium heat.Cook until sugar is dissolved, stir in lemon and corn starch mix. Cook on a medium fire until the mixture begins to thicken up quickly. It should look thick and glossy.

Remove the crust from the oven and spread the lemon mixture evenly  and further bake for 15 minutes till the edges. becomes bubbly. Remove the pan from the oven. Allow the bars to cool completely..

Refrigerate it for at least 2 hours before slicing them into bars.
