Self saucing puddings definitely packs a punch. Just handful of ingredients to assemble  and freshness bursting from the seasonal oranges makes it totally irresistible.

This dessert is always popular with my boys and last school holidays we had baked it quite a number of times.What I love is the combination of a sponge cake and a smooth citrus sauce underneath. It’s hard to believe something so deliciously warm could be so simple and fuss free.

Orange self saucing pudding

  • 1 cup Self raising flour
  • 1/4 cup almond meal
  • 1/3 cup honey
  • 2 orange zest
  • 1/2 cup buttermilk
  • 2 eggs
  • 50g butter
  • 1 1/2 cup fresh orange juice
  • 1/2 cup boiling water
  • 1/3 cup castor sugar
  • 2 tsp cornflour

Whisk egg, honey, buttermilk and zest in a large bowl. Stir in flour and meal until smooth and combined.

Pour the batter into a round greased baking dish. Evenly scatter the cornflour over the batter. Place juice, boiling water and sugar in a jug and stir to combine.

Preheat the oven at 200’C for 10 minutes. Carefully pour over the pudding mixture. Bake for 35 minutes until golden and firm to touch. Remove from oven and serve warm with pouring cream.
