In a medium bowl, whisk together the eggs, buttermilk and butter until they’re well blended.
In a separate bowl, combine the flour, baking powder, baking soda, sugar, salt and zest. Add this dry mixture into the buttermilk mixture.
Spoon about a half a cup of batter onto the hot waffle iron, close, and cook until golden brown.
Serve warm with double cream, caramelised bananas and pecans. Drizzle warm honey and poppy seeds.
