I know it’s been a while my blog is sitting quite, close to two months now.. Hey !! Did I mentioned in the my last post that I will be heading off for an exciting break. Yes !! It was the memorable break of my life and you have heard it right !!! Absolutely phenomenal. Around mid week of March I went for a mind and soul cleansing experience. More popularly known as Vipassana, an ancient Buddhist technique of art of living focussing on natural breathing, feeling body sensations and maintaining complete noble silence for the duration of course. It was a game changer for me and I would highly recommend this, an essential therapy for every human being in today’s world.

As we all know our mind is chaos, restless, selfish and constantly seeking for assurance. Without realising the consequences we are dragged into the whirlwind of suffering. Taking 10 days out of our busy life, prioritising it sounds daunting but I feel it was well worth the time and effort. I feel different, let’s put it in a simple way -a refreshing slap in the face to lead more contended and grounded life. Well now that I have experienced  a great way to charge my mindset, this will be a process for me. More information about the course is found here.

Last month was rather busy for me  too with couple of exciting photo shoots, lined up immediately after my vipassana trip. I had my extended family visiting us from India too around Easter break and not to mention the school holidays that made April even more exciting.

Every mom would know, what school holidays are like? Food becomes limelight of the holidays with two active boys constantly hovering around the pantry!! Mum’s can resonate well with me and often try  their best  to come out with quick satisfying treats. This is how my version of cheat’s lemon tart came into form. I am a big fan of egg tart because of their flaky pastry shells. Having lemon curd incorporated into those shells was an interesting twist. I followed the steps of making shells from here and filled it up with a different version of lemon curd. It turned out be delicious. Tag me, if you are with me in this cheat’s lemon tart version.

How to make Cheat’s lemon tart

Cheat's Lemon tart

  • 3 eggs
  • 1/4 cup honey
  • 1/4 cup coconut oil/ unsalted butter
  • 1/3 cup fresh lemon juice
  • 2 tbsp lemon zest
  • pinch of salt
  • 1/4 tsp pure turmeric ( optional )
  • 1 sheet of puff pastry defrosted

Mix together eggs, honey, lemon zest, salt and turmeric in a medium saucepan.

Heat over medium-low heat and once everything is well-combined, add the coconut oil or butter and continue stirring.

Once melted, stir in the lemon juice.Cook the lemon curd over medium-low heat, stirring constantly, until it thickens – about 4-10 minutes.

It's ready once the curd coats the back of a spoon. Remove and let it cool down.

Pre-heat oven to190°C fan-forced. Lightly oil 12, ⅓ cup capacity muffin pans.

Place a sheet of pastry on a flat marble slab and cut in half forming two rectangles. Place one on top of the other.

From the short end, roll up firmly to form a roll of pastry.

Cut into 12 equal sized pieces.

Roll pieces of pastry to approx. 8cm diameter and press into muffin pans.

Spoon lemon curd between pastry shells and bake for 18 to 20 minutes until curd is starting to turn golden.

Allow to sit for several minutes before removing from pans. Enjoyed best whilst warm.
