I know it’s been a while my blog is sitting quite, close to two months now.. Hey !! Did I mentioned in the my last post that I will be heading off for an exciting break. Yes !! It was the memorable break of my life and you have heard it right !!! Absolutely phenomenal. Around mid week of March I went for a mind and soul cleansing experience. More popularly known as Vipassana, an ancient Buddhist technique of art of living focussing on natural breathing, feeling body sensations and maintaining complete noble silence for the duration of course. It was a game changer for me and I would highly recommend this, an essential therapy for every human being in today’s world.
As we all know our mind is chaos, restless, selfish and constantly seeking for assurance. Without realising the consequences we are dragged into the whirlwind of suffering. Taking 10 days out of our busy life, prioritising it sounds daunting but I feel it was well worth the time and effort. I feel different, let’s put it in a simple way -a refreshing slap in the face to lead more contended and grounded life. Well now that I have experienced a great way to charge my mindset, this will be a process for me. More information about the course is found here.
Last month was rather busy for me too with couple of exciting photo shoots, lined up immediately after my vipassana trip. I had my extended family visiting us from India too around Easter break and not to mention the school holidays that made April even more exciting.
Every mom would know, what school holidays are like? Food becomes limelight of the holidays with two active boys constantly hovering around the pantry!! Mum’s can resonate well with me and often try their best to come out with quick satisfying treats. This is how my version of cheat’s lemon tart came into form. I am a big fan of egg tart because of their flaky pastry shells. Having lemon curd incorporated into those shells was an interesting twist. I followed the steps of making shells from here and filled it up with a different version of lemon curd. It turned out be delicious. Tag me, if you are with me in this cheat’s lemon tart version.
