Finally…after years of trials and tribulations and endless hours spent on perfecting the most desired sweet tooth recipe I found my version of the perfect chocolate chip cookie recipe that is soft and chewy. What makes this even more special is baking them using ancient grains like Spelt whole meal flour instead of the regular plain flour. The results were just amazing and above all generously lading those delectable discs of pure goodness with their distant cousin- dark chocolate melts made it ultra-special.
If you are regular reader of my blog, you have already figured out that baking is my passion and I indulge quite often hobnobbing with my oven. So one of the biggest challenge for me is to keep looking for healthy appetising recipes that also wins a big tick in my boy’s list of treats. Kids love the sweet treats but finding a recipe that is healthy at the same time & appeases to their highest sense of discretion can be quite the uphill trek.
Finding a recipe and baking it by swapping regular flour with ancients grains and getting that perfect taste is like finding the treasure pot of gold at the far end of the rainbow, rare but worth every second of effort put into it. Honestly, this chocolate chip cookie in my opinion qualifies to that supreme level of perfectness.
Now the pertinent question remains why use spelt flour ?. Is that something different from our regular whole meal flour? I have read many articles on the web and finally found out that this organic whole meal spelt flour is fibre rich and has more minerals and proteins as compared to the regular whole meal flour. So baking cakes, bread, cookies and even doughnuts gives it that extra oomph factor that regular processed plain flour often fails to deliver.
As we know Fibre, helps slow down digestion and absorption, reducing blood sugar spikes.That this is so necessary for kids these days with the amount of stimulation and activities they are engaged in. Also the slow release and breakdown of the complex proteins ensures that kids do not crave for more sugary treats and are able to sustain their energy for a longer time while also not wanting to stuff their tiny mouths with junk food.
