I know it’s spring when the warmer sun and bewitching scent of new blooms in my garden starts to lure me. Our garden just comes alive from a dead patch. A narrow strip in front of my house and our veggie patch in our backyard thrives as we march towards summer. Apart from blooms that are show stealer, mangoes and stone fruits are also one of the joys of this season too.
This year our cute little mango tree couldn’t tolerate the harsh frost and just shrivelled. Wasn’t pleasant at all to see the dry and dead leaves… I reckon Sydney is not at all ideal for growing mangoes but any way we wanted to give it a try.
Now after Diwali and loads of entertaining, the sugary treats and party sliders have literally taken a toll on my body weight .. I feel few kilos heavier. You all know how it affects a women ‘s mind mentally …
Right now seriously I feel like going on a salad diet and take it easy before we hit the festive season that’s ahead of us. Not to mention my trip to India during summer holidays. So keeping that in mind, this mango jalapeño salad with a striking kick from jalapeño dressing is ideal for my lunch time fare.
I have added grilled tofu to make a balanced meal. If don’t fancy tofu, grilled holoumi or paneer would be an ideal substitute too.
How to make an amazing Mango jalapeño salad
Mango Salad with Jalapeno
A light and refreshing salad for summer entertaining adapted from “Superfoodideas”
- Ingredients
- 2 mangoes sliced
- 2 cups red cabbage shredded
- 1 carrot , thinly sliced
- 1 cup baby spinach leaves
- 1/2 cup mint leaves
- 1/2 cup coriander leaves
- 250g grilled tofu/ holoumi / paneer
- For the dressing
- 2 tbsp oil ( olive or rice bran)
- 1/2 cup lime juice
- 1tbsp finely chopped jalpeno
- 1tsp maple syrup / raw sugar
Method
Place cabbage, carrot, spinach, coriander, mint and tofu in a bowl. Toss to combine.
Combine all the ingredients for dressing and season it with salt and pepper. Keep it aside.
Add mangoes and dressing just before serving it.
