I am blown away with this awesome nutty and spicy taste and they are quite easy to bake as well. These sweet spicy eggless cinnamon scroll are quite popular in my kitchen and honestly one don’t need to be an expert in baking these soft and aromatic buns. A good kneading and instant dry yeast makes all that difference.
Phew!!! After a tumultuous two week long break that feels more like two year, finally, the kids are back at school & the second term after the Easter break has resumed. I do feel a little guilty of passing the monkey on my shoulders on to the teachers but I suppose that is why we have school holidays and school terms, or at least that is my excuse for not wanting to feel all guilty.
Yes!! You can also feel the nip in the air, Autumn is at its peak with its multitude of colours and the occasionally truant gales that make you want to run into your warm pull overs alternating with amazing noon time sunshine. Winter in this part of the world is slowly making its way but thankfully rather leisurely this time around. It is still beautiful weather in Sydney and wearing a light jacket is comfortable enough.
School holidays despite my two monkey’s constantly needing attention were still so enjoyable and yes it has its own special charm, but at times I long for those uninterrupted time and space boundaries and my little space where I can relax without being constantly buzzed & being wanted. When my work is centred on creativity & content, you can imagine how restless I would be feeling towards the end of the holidays unable to wait for them to get over.
On a more positive note though one of the best part of the holidays is that I really enjoy & love seeing my boys playing outside in the afternoon, constantly running around with our neighbour’s kid Racing bikes or playing ball on the front yard or simply running around in a pretence game. Alternating between jumping on the trampoline to rolling on the grass, between eating icy poles and having a popcorn fight, the entire street comes alive with kids from 4 to 14. It’s amazing and really heartening to see that kids can entertain themselves in an analogue fashion (excuse the pun!) rather than sitting glued to a digital frame. In an era where life seems to start and end with the social media and electronic gadgets, it is absolutely great to see them build their make belief toys from the twigs and newspapers and empty cardboard cartons and still be able to entertain themselves.
I sometimes wish to capture these in celluloid to show and remind everyone that there is indeed a life beyond I pads and the TV and the Mobile phones as it once was. This is an extremely healthy way of reliving one’s childhood and I hope that they continue to do this every school holiday. It has been a blessing to come back to Australia and live these carefree moments, a very nostalgic reminder of how I spent my childhood school holidays back in India racing tyres and flying kites and arranging nuptials for my dolls that looked more like aliens with their missing limbs. It’s great to see history repeating itself…..

Coming to this egg less cinnamon scroll , I am blown away with its awesome nutty and spicy taste and they are quite easy to bake as well. So here is the fail proof recipe adapted from MunatyCooking











How to make Eggless Cinnamon scroll

  • Eggless Cinnamon buns

    • ¾ cup warm milk mixed with 1½ tablespoon lemon juice, keep aside for 5 minutes
    • ¼ cup oil
    • 1 tablespoon butter melted
    • 1 pkt instant dry yeast ( 7 grams)
    • ¼ cup sugar
    • 2¼ cup all-purpose flour
    • ¼ teaspoon baking powder
    • ¼ teaspoon baking soda
    • ½ teaspoon salt
    • For cinnamon filling
    • ½ cup brown sugar / coconut sugar
    • 1 tablespoon cinnamon powder
    • 3 tablespoon softened butter

    In a small bowl, mix milk with sugar and yeast. Cover and set aside for 10 minutes.

    Sift flour, baking soda, baking powder, and salt. Keep aside.

    Add oil to butter, pour on the flour mixture and mix using your hand.

    Add the milk mixture to the flour gradually and knead until you get a smooth dough, will take 7 – 10 minutes of kneading.

    Cover the dough and keep in warm place to rise, for 1 or 1 and half hour.

    Making the filling:

    Mix all ingredients together and keep aside in cool place.

    Roll dough into a rectangle shape.

    Spread the filling with your hand on the rolled dough.

    Roll it up from the longest side, roll tight but not too tight. Pinch the seam tightly.

    Cut the roll into 16 slices and place on baking sheet. I used a large greased baking sheet since I wanted the rolls to have enough space to expand when left to rest.

    Cover the rolls and let rise for 40 minutes.

    Preheat oven to 180C/360F. Bake 15 to 18 minutes or until it's golden.

For the glaze ( optional) I used 2 to 3 tbsp of icing sugar with1 tsp of milk. Drizzle them over cinnamon buns and serve.

    I love eating at Cinnabon’s , but am intimidated by the recipe itself :D. These pictures are so beautiful and the cinnamon-buns look so delicious that I am tempted to try this 🙂
