What a better way to welcome spring. Having a thick velvety asparagus soup is so comforting and best way to beat the last few days of chill.

The onset of spring sees the whole new gamut of vegetables in the supermarket. Asparagus is one of them. This creamy Asparagus soup is undeniable the best part of spring. These crunchy spears are so juicy and tender. Honestly It doesn’t take time to whip these steaming bowl of velvety soup.

My love for vegetables has made me a soup addict too. Having a nice comforting soup with crispy sour dough toast is really a perfect working lunch for me. This roasted pepper tomato soup is generally what I have for lunch.

Do you have any favourite way to eat your asparagus ? For me apart from soup, I prefer to boil or at times steam them. These seasoned tender spears are cooked in matter of minutes and goes so well with hollandaise sauce. Another way to whip these spears is to wrap them in prosciutto and grill them. These are boys favourite.

But I make the most of the short asparagus season with this simple yet delicious soup.

So let’s diving into making this thick creamy velvet asparagus soup with just few ingredients.

 

 

HOW TO MAKE CREAMY ASPARAGUS SOUP

  • 1 bunch of Asparagus spears
  • 1 medium boiled potato
  • 3 cloves of Garlic minced
  • ½ cup milk
  • 1 tbslp of cream
  • Dried herbs to garnish
  • Salt and pepper to taste
  • ¼ tsp ground nutmeg (optional)

Trim the woody edges of the asparagus and chop the tip and retain the middle portion.

Boil the woody edges in 2 cup approx water for 10 mins.

Drain and retain the stock. Heat oil in a pan and sauté garlic mince .Add the chopped middle portion. Cover and cook till they are tender.

When they are tender, blend them very well together with boiled potato and adding the stock. Transfer them to a saucepan and add milk. Keep stirring and don’t let it boil.Season it with salt, pepper and nutmeg. Garnish it with cream and dried herbs. Serve hot with bread.

    oooo i love asparagus!!so i can imagin how tasty the soup must have been..unfortunately my hubby doesnt like soups:(…but i would love to have some:)

    Have never tried asparagus soup- somehow i have always thought of it as being bland (wierd since i have never tasted it but thats me:)) the pic is absolutely tempting….your blog layout is pretty good- very clear and distinct- and some of your recipes have a detailed version with the pictures which is pretty good too.
