What a delightful & gorgeous polenta cake I baked recently, a recipe adapted from Jamie Oliver. The combination of polenta with almond meal bursting with flavours from seasonal citrus fruits makes it a bespoke & keepsake recipe.The taste and the texture of the polenta cake when served with warm syrup is just ambrosial .
It was almost lunch time.. the aroma of the polenta cake wafted through the house making it absolutely irresistible. My niece who was busy with her assignments made her way to the kitchen for a slice. Well I had no choice but to make her wait till I captured it with through my lenses.
Here are few lines from my niece who wishes to share her thoughts with you my beautiful readers.
I was lost in my thoughts,
When the oven started beeping
Hinting a sign of something baking,
I went to have a quick look
Smitten by the lovely waft,
My eyes were transfixed on
The freshly baked lemon tart
My aunt asked me to wait,
Until she clicked some photos of the same
Oh! I cant explain the struggle it took,
To wait for her to finish the shoot
Finally, the glorious moment arrived,
When I took a bite of the gorgeous tart
I felt the tanginess of the lemon zest
With a simultaneous sweetness of cardamom
As it melted in my mouth
Which tasted as divine as it looked…
