This Chocolate orange swirl cake was a sheer delight to bake for a special occasion. Last month, my eldest boy turned 14, being a school holiday we decided to make it simple and a quite celebration. We had a lovely day to ourselves and later in the evening we head out to the city for a lovely dinner. This cake was his choice and he suggested me to really keep it simple rather than going for  heavy sugary frostings or fondant.  So you can  guess that he has a good taste or developing a finer taste. On this special occasion,  I asked my other half to write a peom for him and  thought of sharing with you all..my beautiful readers. Thanks for your support and the month of April reminds me of  my beautiful journey of reconnecting with my food blog exactly 3 years ago… after a haitus.

 

 For Rohan on his 14th Birthday……

Today as you stand between the cusp of child and man
I hope my son you choose wisely, for time waits for none.
There will be time for work and there will be time for fun.
However remember your choices are what will make you a man my son.

I hope you have learnt that success and failure are merely an illusion.
Just like sorrow and happiness those two imposters. Another delusion.
Remember that there are many different colours, sounds, and smell
However, our mortal selves with our limited faculties are merely a drop in the well.

There are many a philosophies, songs and stories in this beautiful world
That I hope will carry you on their wings of fancy & help you to mould
For you to discover & learn to love the muscle and mystery & music of curiosity
For curiosity alone, will mould you a man my son  and write your  legacy in letters of gold.
 

I hope you have learnt that you will be judged by the friends you keep and the books you read.
I hope you have realised the importance of mindful existence, breath and exercise.
I hope you always remember that no matter what you will always be the apple of my eyes
No matter how old you grow as a man you will always be my Tiger my child.

Chocolate orange swirl bundt cake

  • 2 cups plain flour
  • 1 tablespoon baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup melted unsalted butter
  • 1/2 cup oil (Canola or sunflower)
  • 4 eggs
  • 3/4 cup milk
  • 1/4 cup fresh orange juice
  • 1 cup castor sugar
  • 1 tbsp orange zest
  • 2 tbsp dutch processed cocoa mixed with 1 tbsp warm water
  • 1/4 tsp orange colour

Preheat the oven at 180 C for 10 minutes. Grease a bundt pan very well. Shift plain flour, baking powder and salt together. Whisk eggs, sugar, oil ,melted butter and milk until well incorporated. Add in the extract and stir in the sifted flour.

Divide the mix equally into two separate bowl. Add in zest ,juice and colour to one bowl. Add cocoa mix to another.

Pour few tablespoons of chocolate batter into the bundt pan. Gently shake the pan to evenly spread it out. Now pour the entire mix of Orange batter to the pan. Top it with the remaining batter of chocolate mix.

Bake for 30 to 40 minutes or until done. Remove from oven and let it cool down for 10 minutes. Run a knife around the edges of the pan and slowly remove the cake by turning it upside down with a plate covered.

To make the chocolate sauce. Melt 200g of dark chocolate ( I used plaistowe ) in the microwave in short bursts. Keep checking in between otherwise chocolate gets burned quickly. Now add 300 ml of thickened cream. Stir the mix and microwave it for few more seconds until you get to a pouring consistency. Drizzle this syrup on the cake and serve.
